Banana-Chia “Blondie” Squares

This is one of those recipes that just come together on the fly. Completely made it up as I went along and it turned out great.

I won’t be sharing a proper “recipe” becasue this was completelt unplanned and not rigorously tested.

So, I have had three rotting bananas looking miserable in my fruit bowl for the past two days. I had two options: ‘make a smoothie’ or ‘bake banana bread’. I settled on the banana bread becausee blending the smoothie would’ve woken up my sleeping baby. No-brainer, really.

After mixing my mashed bananas, sugar, melted butter, egg, plain flour and baking powder, I went to the cupboard to grab my loaf tin, but it wasn’t there. Turns out my daughter didn’t soak or wash it the last time she baked banana bread and it was still in the oven, caked in dried-up batter. Yuck #realife

Anyway, I had to think fast on my feet so I grabbed a brownie tin. As I was about to pour my batter in, I thought it looked rather bland so I went looking for some chocolate chips in my pantry. Again, nowhere to be found. Then I remembered that I am on a clean-eating phase so there’s defo no choc chips in here. LOL. Uhhh what to do now?

I only have the “healthy stuff” left in my pantry- Chia seeds and Cacao nibs! They’ll have to do. I guess…

Long story short, that’s how I ended up with this delicious accident.

Deliciously crunchy and fudgy.

Moral of this story? I’m not even sure 🙂 Maybe you’ll figure it out. But if you don’t, then try out the “recipe”.
